Sommelier
Job Description
HAKKASAN, the Michelin-starred restaurant, is currently recruiting for an experienced and motivated sommelier.
Essential Duties:
*Minimize stock leakage
*Ensure all delivered items are approved and prices are checked
*Monitor established par levels and adjust them as required, including glassware
*Return corked wine and deduct from invoices and chase credit notes
*Ensure that all wines are correctly updated and described on wine lists, e.g. correct vintages, description and price
*Attend training sessions and briefings to improve the staff’s overall knowledge of wine in general, with reference to and focus on Hakkasan wines
*Attend wine tastings and meetings on designated days
*Boost and maintain a wine “culture” in Hakkasan through regular training sessions with the staff
*Work alongside the management team when producing reports, and to a them to determine wine policies with Head Sommelier
*Liaise constantly with the Restaurant Managers during the service in order to understand the guests’ needs and fulfill them
*Ensure the pre-shift preparations are completed. E.g. glasses and carafes are polished, iced buckets are filled with ice and ready for service and the fridge temperatures are in the correct range
*Assist customers with wine selection to match their food and their taste
*Ensure that all the wines are served constantly/consistently and correctly
*Keep the wine dispense area clean and to the highest standard throughout the shift
*Communicate all maintenance requirements of the department
*To be fully conversant with all aspects of the operational and order of service procedures
*Complete all administrative duties fully and as written within the schedule
Requirements:
Flexible schedule and team spirit a must. Previous fine dining experience and at least three years in a related field.
